Easy pumpkin soup recipe
This is a classic, easy pumpkin soup as my grandmother used to make it. You don't need any special ingredients, just the basics. Especially near Halloween, there’s nothing better than dunking a chunk of bread into a damping bowl of creamy pumpkin soup.
Now what ingredients do you need?
1 kg / 2 lb pumpkin (any)
1 garlic clove
4 cups / 1L water
2 blocks of dry-cooked broth (chicken or vegetable)
some olive oil
Adjust all ingredients to the total weight of your peeled pumpkin.
Cut the pumpkin into 3cm / 2.25" chunks after cutting the skin off and scraping the seeds out.
Sweat the onions and garlic in olive oil until they have a golden color. Do this in your soup pot.
Add water and the pumpkin pieces and let boil until your pumpkin blocks are really soft
Remove from heat and use a stick blender to blend until smooth.
Ladle soup into bowls and serve with crusty bread
